This beautiful washed lot from experienced coffee producer, Elevi Rufasto, is yet another shining example of the positive impact Falcon Specialty’s ‘Blueprint’ initiative is having on coffee quality in the Cajamarca region of Northern Peru. We are now into our 5th year of purchasing Peruvian coffee through Falcon Specialty and fully support their push to protect specialty producers and prevent quality coffee from getting swallowed up by the commercial industry.
Elevi is a veteran of the industry having produced coffee in La Union, San Jose del Alto for more than 20 years. He cultivates Catimor and Typica varietals on his family farm, La Naranja, and is getting fantastic results producing washed coffee thanks to its 1700 metre altitude and rich fertile soil. Elevi has complete control over the processing of his cherry and is able to wash, pulp, ferment and dry his coffee, on his 2 hectare plot of land. Not having to outsource processing is crucial for Elevi, allowing him and his family to access as much income from the coffee supply chain as possible.
Once his coffee has left the farm, it arrives at Falcon’s warehouse in Jaen where the quality is assessed and a fair price, often 30% more than that of the local market value, is paid. The Blueprint program has been pivotal in forging long-term relationships with producers like Elevi, placing a real emphasis on improvements in coffee quality and increasing participant household income through access to these quality premiums.
